Salsa De Tomatillo

Tomatillos, white onion, garlic, chili pepper, fresh cilantro, salt and pepper. This is a nice alternative to tomato salsa.
Ingredients -

10 Tomatillos, husked
1 small White Onion, chopped
3 cloves Garlic, chopped
2 Jalapeno or Serrano Peppers, chopped
1/4 cup chopped Fresh Cilantro
Coarse Salt, to taste
Fresh Ground Black Pepper, to taste

 
Preparation:

1. Add tomatillos to non-reactive saucepan, cover with water, and bring to a boil.

2. Reduce heat, simmer about 10 minutes, until tomatillos soften and begin to burst.

3. Drain tomatillos. Add to food processor with onion, garlic, jalapeno peppers, cilantro, salt and pepper.

4. Blend to desired consistency.

Milder Salsa
Remove all of the ribs and seeds from the jalapeño or serrano pepper for a milder salsa.

Always wear gloves with chile peppers, as the oil from the skins can burn your skin and eyes. Remember to wash your hands when handling chili peppers.
