Peachy Avocado Salsa

Peaches, avocados, lime juice, tomato, onion, and cilantro, flavored and seasoned with cider vinegar, jalapeno pepper, garlic and salt.
Ingredients -

1 (15 ounces) can sliced Peaches, drained and diced
1 medium Ripe Avocado, diced
1 tablespoon Fresh Lime Juice
2 cups diced, seeded Tomato
1/4 cup diced Onion
2 tablespoons minced Fresh Cilantro or Parsley
1 tablespoon Cider Vinegar
1 teaspoon seeded chopped Jalapeno Pepper
1 Garlic Clove, minced
1/4 teaspoon Salt

 
Preparation:

1. Add peaches, avocado, and fresh lime juice to bowl. Stir to combine. Add diced tomato, onion, cilantro, cider vinegar, jalapeno, garlic and salt. Toss to combine.

2. Cover and refrigerate at least 30 minutes.

3. Serve with tortilla chips or your favorite poultry or seafood dish.

Avoid Avocado Discoloring
Both lime juice and oil will reduce the chance of discoloring. When storing avocado or avocado dishes, cover tightly with plastic wrap.

When purchasing avocados, look for dark green, almost black bumpy skins. Press avocados to test for ripeness. The avocado should give a little, but not be spongy.
