Party Salsa

Salsa for the masses. This mild to medium hot salsa recipe has been sized to feed a small army. Tomatoes, green onions, cilantro, onions, banana, jalapeno, cayenne, bell, and salad peppers.
Ingredients -

5 pounds Ripe Tomatoes, stemmed and quartered
8 ounces Green Onions
1 teaspoon Cilantro, very finely chopped
4 ounces Banana Peppers
4 ounces Jalapeno Peppers
1 ounces Cayenne Peppers
12 ounces Bell Peppers
2 Sweet Onions
2 pounds Salad Peppers (pepperoncini)
1 cup Vinegar Juice from Salad Peppers
8 teaspoons Lemon Juice

 
Preparation:

1. Add ripe tomatoes and other ingredients in batches to food processor. Pour into large serving bowl. Mix together.

2. Cover and refrigerate until ready to serve.

When making salsa, always use fresh spices. A spices flavor and strength deteriorates over time. Keep spices in covered containers away from sunlight. Discard spices that are older than six months old.

Roasting Peppers
Bell peppers and chili peppers can both be roasted easily in the oven or on the grill. A little vegetable oil to rub on the outside is all you need. The process from start to finish will take about an hour. The results are well worth the time. The peppers can be used immediately or stored for later use.
