Fiery Fruit Salsa

Organic fire roasted diced tomatoes, mango, green onions, fresh cilantro and chipotle chili highlight this wonderfully flavored salsa.
Ingredients -
1 (14.5 ounces) can Organic Fire Roasted Diced Tomatoes, drained
1/2 ripe Medium Mango, peeled, diced (3/4 cup)
1/4 cup sliced Green Onions (4 medium)
2 tablespoons chopped Fresh Cilantro
1 tablespoon Fresh Lime Juice
1 teaspoon finely chopped Chipotle Chile in Adobo Sauce
1/4 teaspoon Coarse Salt (kosher or sea salt)
 
Preparation:

1. Add drained organic fire roasted diced tomatoes to food processor. Cover and process to desired consistency.

2. Place in serving dish. Stir in mango, green onions, cilantro, fresh lime juice, chipotle chile, and coarse salt.

3. Serve with meat or fish, or with tortilla chips as desired.

Make Ahead Salsa
Many salsas can be made well in advance of serving. Make this salsa up to 24 hours ahead of time. Store tightly covered in the refrigerator.

Mild peppers include the Anaheim, Banana/Hungarian and Poblano peppers. These are excellent peppers for fresh salsas that need just a little heat.
