Chipotle Salsa

Stewed and diced tomatoes with garlic, onion, and jalapeno pepper. Excellent salsa for dipping, serving on your favorite hard bread, or for serving with poultry or seafood.
Ingredients -
1 can Stewed Tomatoes (with juice)
1 can Diced Tomatoes (with juice)
1 Clove Fresh Garlic (diced)
1/2 Purple Onion (chopped)
1 Jalapeno (chopped, seeds removed)
1 Fresh Lime (squeezed)
1 Can Chipotle Peppers (6 ounces)
1 bunch of Fresh Cilantro, diced
1 teaspoon Cumin
Sugar, to taste
Sea Salt, to taste
 
Preparation:

1. Add stewed tomatoes, diced tomatoes, fresh garlic, onion, jalapeno, fresh lime, chipotle peppers, fresh cilantro, cumin to food processor. Pulse until smooth.

2. Pour salsa into serving bowl, and season with salt and sugar.

3. Refrigerate 1 hour before serving.

Individual chili type such as jalapeno, serrano or poblano vary widely in heat and flavor. It is best to taste chilies, and adjust your recipes accordingly.

Chipotle peppers are jalapeno peppers that have been roasted and packaged in jars. The peppers exhibit a mild smoky flavor. They are available in most supermarkets.
